Could someone maybe give me a tip how I can create such a winch ?

There are "winch" servos you can get to do this job. Something like this: Futaba S5801 Servo Sail Winch (http://www.gpdealera.com/cgi-bin/wgainf100p.pgm?I=FUTM0099)

You would then hook a metal like to it with the hook on the end and there you go.

those servos only spin 1 full rotation, it takes 30 seconds to modify a servo to have continuous rotation.

I takes a little longer the 30 seconds but not much. Then you have a servo that continualy rotates and could make a winch spool that mounts to the servo or even gear it down.
