Has anyone converted one to actually hold fluid?
I was thinking it would be cool to convert one to be a little mobile mini bar and hold 3 different types of alcohol with some kind of little taps on the bottom to fill shot glasses. Being that its SS it should be alright, just have to divide it into sections.

I think you could use a water bladder from a Camelback hydration system. they key would be to pressurize it to get it back out. Maybe some type of mechanical pump

The tanker trailer is very high on my list. I was thinking filling mine with whiskey since that does not go bad for a long time.

When I looked at the manual (which you can download from Downloads section), I realised that for my purpose (one beverage) it would be fairly easy. I only need to seal the front and rear walls. That can be done with silicone. Then it can hold a fluid.

I would suggest changing places for the front and rear walls as the front wall has a hole in it that could be used to hold a tap. There are several miniature taps available. Look for instance at where the live steamers source theirs'. They are most often made of brass but a SS one ought to be possible to find. As far as the lid goes you only need a cork or find a suitable o-ring that would make for a tight fit on the stock D2, D7 parts.

I have thought of using bag-in-box wine containers since they already come with a tap. They appear to be similar to the Camelback Hydration System Shodog mentions. As he points out such a system could work. I would not consider the pressurization to be a major problem as gravity will help drain it. Even if you divide the space into three sections each would still hold enough fluid for gravity to easily eject it.

However, you would need two containers with longer hoses (of which one would have to be even longer) as they need to run below the others. You would most probably benefit from making a supporting tunnel of sorts so that the weight of the other containers does not hinder the flow.

The downside to a bladder system would be having to stand the tanker trailer on its front in order to fill the tank(s). But hey, are not most of us odd enough to get away with that!
